Apple Chicken with Rice and Beans


Makes 4 servings
Ingredients:
# 1 cup long-grain brown rice
# 1 tbsp olive oil
# 3 cups low-sodium chicken broth
# 16 oz chicken breast (4 chicken breasts)
# 1 tbsp oat flour (or similar for thickening)
# 1 tbsp Smart Balance 50/50 Butter Blend
# 3 stalk fresh sliced green onions
# 1/2 cup organic apple cider
# 1 lb cut fresh green beans
Directions:
In a large saucepan, heat 1/2 tablespoon oil over medium heat. Add the rice and toast until light brown, about 4 minutes. Stir in 2 cups broth and bring to a boil and sliced green onions, then lower the heat to medium-low, cover and cook for 15-20 minutes or until tender.
While the rice cooks, in a large skillet, heat the remaining 1/2 tablespoon oil over medium-high heat. Season the chicken lightly with salt and pepper, add to the skillet and cook until the juices run clear, 5 to 6 minutes on each side. Transfer to a plate and cover with foil to keep warm.
Melt 1 tablespoon butter in the skillet, then whisk in the flour and cook for 1 minute. Whisk in the apple cider and 1 cup chicken broth and cook until slightly thickened; season with salt and pepper if desired. Remove from the heat.
Steam green beans.
Serve chicken and brown rice with gravy and beans.
